A pair of complementary Cookies, Coconut and Virginia cookies

In this post you will meet a pair of complementary cookies. By that I mean a pair of recipes, one of which uses egg yolks and one that uses the whites.

I don't know about you, but if I cook a meringue it seems so wasteful to throw the yolks away, so here are two cookie recipes that will allow you to use both halves of the egg.

Only three ingredients plus some rice paper, what could be easier? Also they are grabbed off the plate once discovered, so you might want to make double quantities.

Virginia cookies are based on a traditional upstate recipe refined for dainty city life. Only five ingredients and bake them lightly so they remain moist in the centre.
