Scottish Honey & oat cookies
Well, you do have a load of fun when trying to copy cookies you buy. Experimenting with different ingredients brings both rewards and surprises. I had not used oatmeal in cookies before, and it is very different from normal all purpose, plain, flour.
First, most recipes and ingredient lists talk about 'rolled oats'. Well, we made sure we got hold of some, and they are just the squashed germ with almost no flour dust. If you try using that on its own in recipes that say 'rolled oats', you get cookies that are much softer than you would expect.

However, the rolled oats do have their place. They do give cookies a distinctive roughness to the texture which is very pleasing on the tongue. But you do need to mix in some proper flour as well to give the cookie some body.
