A pair of complementary Cookies, Coconut and Virginia cookies

Hi,

In this post you will meet a pair of complementary cookies. By that I mean a pair of recipes, one of which uses egg yolks and one that uses the whites.

I don't know about you, but if I cook a meringue it seems so wasteful to throw the yolks away, so here are two cookie recipes that will allow you to use both halves of the egg.

The Coconut cookies can be found at http://www.easy-sugar-cookie-recipes.com/coconut-cookie-recipe.html Coconut-cookie-recipe.html page on the website. Only three ingredients plus some rice paper, what could be easier? Also they are grabbed off the plate once discovered, so you might want to make double quantities.

Virginia cookies are based on a traditional upstate recipe refined for dainty city life. Only five ingredients and bake them lightly so they remain moist in the centre.

THE TRAFALGAR 200 COOKIE PART 3

Now we have a set of ingredients and a cooking facility, what kind of recipe would be suitable?

Standard ships’ cooks in those days were generally hardly worthy of the name ‘cook’ as they were frequently battle-injured seamen at the end of their career’s afloat. So their culinary skills were not great.

But ships’ captains and fleet admirals often had their own servants who could cook to a reasonable standard. They would be in touch with new developments so that they could impress their master’s guests. Their utensils would be basic, they would share the general ship’s Brodie Stove, and especially had no electrical gadgets to mix or chill!

So I have chosen a recipe that uses molasses, dried fruit soaked in rum, butter and flour. It has no eggs and requires only simple mixing.
