I’ve been searching through and old recipe book that has traditional American recipes from over a hundred years ago and I found one for soft ginger cookies. Well I rewrote it for the modern cook (and corrected the ingredient list). Then I tried it.&lt;br /&gt;&lt;br /&gt;Disaster. The mixture was supposed to be rolled out, but you could have poured it, it was so wet!&lt;br /&gt;&lt;br /&gt;So I experimented and found a good consistency was somewhere in the middle, no rolling, just thick enough to spoon onto the prepared baking sheets. The next tricky bit was spotting when to get them out of the oven before they went really brown or started to burn round the edges.&lt;br /&gt;&lt;br /&gt;Having managed that we had a result! I found it in a recipe book purchased after a wonderful holiday in Greece several years ago when I fell in love with the fish and sweet dishes. This recipe was a little gem at the back of the book that has now become a family tradition. I make it on New Year's Eve and we cut it at midnight straight after the singing of "Auld Lang Syne" (which means "Old long ago").&lt;br /&gt;&lt;br /&gt;There is a coin baked into the bread, so cutting the bread and finding he coin is all part of the ritual. Experimenting with different ingredients brings both rewards and surprises. I had not used oatmeal in cookies before, and it is very different from normal all purpose, plain, flour.&lt;br /&gt;First, most recipes and ingredient lists talk about 'rolled oats'. Well, we made sure we got hold of some, and they are just the squashed germ with almost no flour dust. By that I mean a pair of recipes, one of which uses egg yolks and one that uses the whites.&lt;br /&gt;&lt;br /&gt;I don't know about you, but if I cook a meringue it seems so wasteful to throw the yolks away, so here are two cookie recipes that will allow you to use both halves of the egg.&lt;br /&gt;&lt;br /&gt;The Coconut cookies can be found at &lt;a href="http://www.easy-sugar-cookie-recipes.com/coconut-cookie-recipe.html"&gt;http://www.easy-sugar-cookie-recipes.com/coconut-cookie-recipe.html&lt;/a&gt; Coconut-cookie-recipe.html page on the website. So their culinary skills were not great.&lt;br /&gt;&lt;br /&gt;But ships’ captains and fleet admirals often had their own servants who could cook to a reasonable standard. They would be in touch with new developments so that they could impress their master’s guests. Their utensils would be basic, they would share the general ship’s Brodie Stove, and especially had no electrical gadgets to mix or chill!&lt;br /&gt;&lt;br /&gt;So I have chosen a recipe that uses molasses, dried fruit soaked in rum, butter and flour. And what an event it was.&lt;br /&gt;&lt;br /&gt;&lt;a href="http://www.trafalgar200.com/"&gt;See event details&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;Returning to cookies, and looking at the ingredients likely to be held on board a ship-of-the-line around 1805, we find flour available, sugar, spices for the officers (probably from a private supply) and salt. Some dried fruit could be available and butter and eggs in limited supply when close to shore. Goats were the main source of milk as cattle were large and kept for fresh meat.&lt;br /&gt;&lt;br /&gt;Molasses could have been available as it is sugar in a form suitable for long term storage. It was made in the West Indies from the 15th Century. Nelson had spent time in the West Indies and would, most likely, have come across it.&lt;br /&gt;And, of course, that naval tradition of rum.&lt;br /&gt;&lt;br /&gt;Cooking was done using a single oven that could supply the whole 175 man crew of the Victory with a hot meal. It was called a 'Brodie' stove after its inventor. These are biscuits that were very tough and baked very dry to give them good keeping qualities, a far cry from the cookies we know today. To eat them they generally had to be soaked to soften them. " &lt;blockquote&gt;&lt;/blockquote&gt;The answer is simple - I got hooked.&lt;br /&gt;&lt;br /&gt;My wife is a good, and professionally trained, cook. She has cooked by far the bulk of our family meals for many years. As the children grew older I, and they, took it in turns to cook family dinner from time to time. As a result they can all feed themselves and the eldest two are now much better than their Dad.&lt;br /&gt;&lt;br /&gt;However I had never tried baking of any sort. So, when the children had left home I decided to give it a go. Not cakes, my wife is certainly the expert there, but cookies and biscuits.&lt;br /&gt;&lt;br /&gt;I became hooked as I tried to interpret an old book of recipes. Very hard to get consistent, or even edible, results as they all assumed much experience and 'feel'.
